Colleen's Killer Chili 🌶️
Easy to make, and feeds the whole family—with the perfect amount of spice!
Ingredients:
- 2 lbs ground pork
- 1 large yellow onion, diced
- 6 cloves garlic (minced)
- 2.5 tbsp chili powder
- 2 tsp salt
- 2.5 tsp dried oregano
- 1/2 tsp ground black pepper
- 1/2 tsp ground cumin
- 1/4 tsp cayenne pepper
- 2 28 oz cans stewed tomatoes
- 2 cans mild ro-tel diced tomatoes with green chilies
- 1 15 oz can tomato sauce
- 1 15 oz can kidney beans (w/liquid)
- 1 15 oz can pinto beans (drained & rinsed)
- shredded Mexican cheese
- sour cream
Instructions:
- Combine pork, onion, and garlic in a pan. Chop and cook until brown. Drain most of the cooking liquid from the pan. Add the contents to a pot.
- Add all seasonings and tomatoes to the pot then cover.
- Bring to a boil then simmer one hour.
- Add the beans then simmer for 20 minutes uncovered.
- Serve with sour cream and shredded cheese.
- Enjoy!
The chef recomends letting it sit on low for a couple of hours. A crock pot may also be used to let it cook slow. But a 20 minute simmer (as instructed above) is just fine!
